Celebrated for his work at La Maison dans le Parc and Yozora, Chef Charles brings his signature French-Japanese artistry to Kuala Lumpur for a truly elegant and memorable dining experience.
His bespoke menu for the award-winning Sabayon masterfully balances French foundations with Japanese influence. The progression begins with the Avocado, Sake, Pear, setting a clean and direct tone for the afternoon or evening ahead. From there, the Hamachi, Cucumber, Coriander highlight a stronger Japanese influence, harmonising freshness in an homage to the best of nature. As the experience deepens, the Scallops, Carrots, Nori introduces a layered contrast of flavor and texture. The menu then transitions to the Duck, Blackberries, Sushi Rice, where richness is perfectly balanced by brighter, tart notes. The journey concludes with the Nougat, Bergamot of Nancy, a refined dessert with a light citrus edge that pays tribute to his French roots.
