docs(hocuspocus): add the 2.0.1 changelog entry

The package version moved to 2.0.1 in the release commit, but its own
changelog was not updated. RELEASE_POLICY.md names it as the operator and
API changelog, separate from the product one.

The entry covers the crash exit code, the image changes, the worker test
correction, and a note that the metascraper pin stays after it failed a
deploy.

No extension changelog changes: zero files under extensions/*/src changed
since v2.0.0, and all five stay on 2.0.0.
