- 2 lb frozen straight-cut fries (do not thaw)
- Neutral frying oil (canola, vegetable, or peanut), enough for deep frying
- Salt, to taste
- Optional: black pepper, paprika, garlic powder, parmesan, chopped parsley
Step 1. Pour oil into a deep pot or fryer, filling it no more than halfway. Heat oil to 350°F (175°C).
Step 2. Add frozen fries directly into the hot oil. Do not overcrowd the pot. Fry in batches if needed.
Step 3. Fry for 3–4 minutes until lightly golden. Remove and place on a wire rack or paper towel-lined tray.
Step 4. Increase oil temperature to 375°F (190°C).
Step 5. Return fries to the oil for a second fry, 2–4 minutes more, until deeply golden and crispy.
Step 6. Remove from oil and immediately season with salt while hot.
Step 7. Add any optional seasonings and toss gently to coat.
Serve immediately while hot and crisp.
Double frying makes the difference between decent fries and restaurant-level fries.
Always fry from frozen. Thawing makes them soggy and oil-logged.
Use a thermometer. Guessing oil temperature is how you end up with limp fries.
If baking instead, follow package instructions and use convection if available for better crisping. Or you try to use an Airfryer - if you want to opt for a healthier version.
